Whenever the summer time rolls around I find myself craving fresh and bright flavors. Maybe because it’s been so hot & humid here, but the thought of a crisp, cold salad makes my mouth water. But when traditional summer salad fixin’s like tomatoes, peppers, and cheese are eliminated, what can you mix into a salad?
Well, I’ve got you covered. There are so many beautiful AIP-compliant summer veggies available, that you won’t even miss those other toppings. I like to build my salads with a variety of textures & flavors, I think this is the key to a yummy plate.
This salad has a nice crunch from fresh fennel, a little bitterness from the radicchio, a hint of sweetness from the fresh strawberries, and a nice little tang from the capers. Top this off with my easy lemon vinaigrette, and you’ve got yourself a mouth watering salad!
Zesty Summer Salad
Ingredients:
2 cups mixed greens
⅓ cup finely shaved fresh fennel bulb
1 cup shredded radicchio
¼ sliced fresh strawberries
1 TBS capers
⅓ cup easy lemon vinaigrette
Directions:
Mix together the greens, fennel, radicchio, strawberries, and capers into a bowl and top with the lemon vinaigrette. Toss to combine and serve immediately.
