Slow Cooker Cranberry Orange Chicken

Slow Cooker Cranberry Orange Chicken (AIP, Paleo)

As some of you may know, about twice a month I have the opportunity to write a post over at the blog Homemade For Elle.  Recently, I shared this recipe for AIP Slow Cooker Cranberry Orange Chicken that is AIP and Paleo friendly. I hope you all enjoy!

Its that time of the year again… that crazy time of year. We are all fully immersed in the business of fall, from school, to work, to extra curriculars, we just run run run. Yet we are also supposed to be enjoying the magic of the season: decorating for holidays, preparing for winter, cooking big meals and traveling to be with loved ones. It seems like there is never enough time.

My fall is especially crazy this year as I am preparing to move to a new city ten days before Christmas! As I prepare for the transition I am trying to be conscious of not getting overwhelmed and letting my favorite parts of the season pass me by. It is this mindset that inspired this yummy recipe.

Slow Cooker Cranberry Orange Chicken (AIP, Paleo)My slow cooker has become my best friend lately, allowing me to spend less time in the kitchen and more time house hunting, packing and planning for our move. I love being able to just throw everything in the pot, turn it on and walk away.

This recipe combines a couple of my favorite flavors of the fall, but in a unique way, perfect for a simple weeknight dinner. Rather than being overly sweet, the cranberry sauce combined with the chicken and onions gives this dish a delightfully sweet, but savory flavor that will leave you satisfied without the sugar overload that comes with many store bought cranberry sauces.

Food is such an important part of life. It allows us to celebrate, come together with family and friends, heal, grow and take time to relax. So, no matter what craziness life throws your way today, this week, this season, take the time to enjoy your favorite flavors of the season with people you love.
