Peppermint Snowball Cookies (AIP/Paleo)

Well it is that time of year again, the season of cute Pinterest-esqu décor, baked goods, and DIY gift ideas. Don’t get me wrong I can spend just as many hours on Pinterest as the next person and I love cute decoration and DIY gift ideas, but the baked goods are a little hard to swallow (pun intended). From the santa hat brownies to the little cookies shaped like snow men or cups of hot cocoa everything is just so cute and kid-friendly and fun.

This is my third AIP holiday season. Last year I committed myself to recreating as many of my old personal Christmas cookie favorites and I was successful on most fronts. My carob coconut squares were a huge hit and some of my fellow AIP bloggers created other great recipes for traditional types of cookies and they were all delicious. But what about those of you out there with little AIP kiddos who want some more cutesy ideas to try? Well, this year I am going to try to help you.

To start us off I have a super simple cookie that requires absolutely no baking!… Yes you read that right. It is a fun twist on a very simple macaroon recipe, you just add in some peppermint and call it a snowball and you have a fun treat to make with your little ones (or your not so little ones, my hubby likes these too).

Peppermint Snowball Cookies (AIP/Paleo)

Peppermint Snowball Cookies (AIP/Paleo):

(Makes about 12 cookies)


2 Cups Unsweetened Shredded Coconut

4 TBS Honey

4 TBS Coconut Oil

½ tsp vanilla extract

1 tsp Peppermint Extract


Pour your coconut into your food processor. In a small saucepan, combine your honey, coconut oil, vanilla extract and peppermint extract. Over medium heat, melt your coconut oil and let simmer for about 8 minutes, stirring occasionally to combine. Pour your liquid into your food processor and blend until well combined. Use a cookie dough scoop or a TBS to form your coconut into balls (you will have to pack it into the spoon tightly to get it to stick.) place the cookies onto a lined plate or cookie sheet and refrigerate for about 2 hours. Serve cold and store in the refrigerator.

  • I would love a sugar cookie recipe (cut outs) that I could make with the kids as that was such a huge tradition for my family when I was growing up. And also gingerbread cookies…if you are looking for some suggestions 🙂
