Nightshade-Free Summer Salsa

Summer is often a season of low-key entertaining and it can be so helpful to have a simple go-to recipe for those backyard cookouts, pool parties, or fourth of July celebrations. Chips and salsa is a classic, but not an option when you can’t eat nightshades. That is why I came up with this recipe. This yummy salsa combines the fresh flavors of summer and is a perfect low-key entertaining staple recipe! The fruit is sweet and delicious, the cucumber is refreshing but it is the ginger and the red onion that bump it up a notch and add that spice that all of us reformed salsa-lovers crave. Nightshade Free Summer Salsa (AIP/Paleo)

Ingredients:

1/2 cup of finely diced cucumber

1/2 cup finely diced mango

1/4 cup finely diced red onion

1/4 cup of finely diced pineapple

1 TBS fresh finely chopped cilantro

1 tsp grated fresh ginger

dash of sea salt

Directions: 

Combine all of the ingredients and mix well. Serve with your favorite Paleo or AIP compliant chips. Here are a few of my favorites:
