There is nothing I love more than vegetable side dishes that are truly the definition of “set it and forget it”, especially if you’re trying to crank out a full dinner on a Tuesday night for a very hungry family. This braised red cabbage makes it so easy to “set and forget” while you focus on cooking other things. What’s more, it makes a ton and can be made in under 30 minutes with the Instant Pot! This recipe ticks all my boxes for an easy weeknight dinner or a batching cooking session.
The end result is the perfect combination of sweet and savory with a little bit of tang from the apple cider vinegar. The braising makes the cabbage melt in your mouth. Trust me when I say it’s addictive. You can serve it as a side dish or add in a protein like ground beef to turn it into a one-pot meal!
Instant Pot Braised Red Cabbage (AIP/ Paleo)
Serves 4 – 6
Ingredients
2 TBS coconut oil
1 medium head of red cabbage
1 cup water
¾ cup apple cider vinegar
1.5 tsp salt
Instant Pot Directions
Shred the cabbage into thin strips. Add all ingredients to your instant pot and close the lid, making sure the vent is set to “sealing”. Press the “manual” button and set the time to 8 minutes, making sure it’s on high pressure. Let the instant pot do it’s thing, and you got savory and sweet braised red cabbage in under 30 minutes!
Stove Top Directions
Shred the cabbage into thin strips. Add all the ingredients to a skillet, turn the heat to medium-low, and cover. Allow the cabbage to simmer for about one hour, stirring about half-way through.
