Easy Weeknight Tacos

Taco Tuesday is a staple in our house. Even when everything else about life is uncertain and the week is filled with chaos, we can count on Taco Tuesday. It never fails. When creating recipes for the blog I have the tendency to want to make fancy dishes, but sometimes it’s nice just to have no-frills, everyday cooking. 

So, this recipe is a look into our life every Tuesday night and if you came over for dinner, I guarantee this would be on the menu. It’s a simple, easy meal that can be thrown together quickly. It’s also a great recipe to make together as a family. Oftentimes, I’ll be on beef duty and my husband will be on guacamole duty and then we’ll come together to enjoy our feast. 

I love to serve these tacos up with my simple, guacamole with a kick and some tostones. 

Easy, Weeknight Tacos

Serves 2 – 4

Ingredients:

1TBS cooking fat (olive oil, avocado oil, coconut oil)

1lb ground beef

1 TBS “ultimate” AIP taco seasoning

AIP Tortillas – I like these Cassava Flour ones

Toppings:

Shredded Lettuce

Guacamole (with a kick!)

Directions:

Heat the cooking fat in a skillet on medium heat. Add in the ground beef and start to break the meat apart as the beef browns. Season with AIP taco seasoning and mix into the beef. Cook until fully browned, about 10-15 minutes. Serve with AIP tortillas and top with shredded lettuce and AIP Guacamole

You can also turn these into taco salad, serving it up with tostones.
