I love an easy salad dressing or vinaigrette. I’ll use them as a marinade for chicken, dressing for a veggie salad, or flavor booster in a tuna salad. They are such a easy and versatile way to bump up the flavor of just about anything you’re making. I like to mix up a batch and just keep it in the fridge for those “flavor emergencies.”
This vinaigrette is so bright and beautifully tangy, perfect for the summer time. It’s also really easy to throw together.
Easy AIP Lemon Vinaigrette
Ingredients:
¼ cup olive oil
2 TBS lemon juice (about 1 lemon)
Zest from 1 lemon
½ tsp stone ground mustard (AIP Reintro – Stage 1)
¼ tsp salt
¼ tsp black pepper (AIP Reintro – Stage 1)
Directions:
Combine all ingredients in a small bowl and whisk until fully combined. You can also shake together in a mason jar.

This is my very favorite vinaigrette. I like to add a bunch of garlic to mine, and herbs. After I learned to make my own dressings, bottled just tastes like crap doesn’t it???
