
This recipe was actually one of the very first recipes I tried upon becoming paleo. It is a fantastic lunch recipe.
My best friend and I were living together when I first began my paleo journey and I remember her coming home on her break one day and asking, “what are you eating for lunch?” I replied, telling her “avocado and tomato…”. She gave me a very puzzled look, shook her head, laughed and said something along the lines of “you and your paleo diet”.
Its been a few years now and my cooking has gotten far more fine-tuned, but friendly joking aside, this is still one of my favorite go-to lunch recipes. Avocados and mayo are high in healthy fat, the bacon adds your protein, and tomato adds a healthy, fresh taste. It may not look like much in your bowl but it is surprisingly filling, incredibly tasty and most days its all I need to make it through most of my afternoon. My tomatoes and bacon are local, the avocados, obviously, are not, but they were on sale in the grocery store and add some much needed variety to my diet. Next time you’re looking for a paleo lunch option give this a try, you won’t be disappointed.
Ingredients:
- 1 ripe avocado
- 1/2 to 1 tomato (depending on how much you like and how many tomatoes you have)
- 2 pieces of cooked bacon
- 2 TBS of paleo Mayo
- Salt to Taste
Directions:
Remove skin and pit from your avocado, and dice it. Cut up your tomato into diced, relatively small pieces, crumble your bacon, add your mayo, stir well and salt to taste. Enjoy.
