AIP Spring Round Up – 30+ Seasonal Recipes

I love the spring. The weather is warmer, the sun is out longer, and the world in general just feels like it’s taking a deep breath and exhaling new life. Don’t you think? The spring has often been a time of big changes or new beginnings for me. It’s like everything just wakes up from hibernation, ready to take on something new. One of my favorite things about spring is a whole new variety of beautiful foods that come available. Don’t get me wrong, I love a good sweet potato or pot roast recipe, but there is something about the freshness and colors of spring veggies that feels revitalizing!

Eating seasonally has several benefits: 1) It limits the possibility of developing food intoleranc

es or sensitivities. When we eat the same foods over and over again our bodies can develop intolerances or sensitivities due to a lack of nutrient diversity. 2) It increases our nutrient diversity. When we strive to eat seasonally, we naturally cycle through different fruits and vegetables throughout the year automatically increasing our nutrient variety and density. Eating seasonally also makes it easier to buy produce from local farmers or markets, increasing the mineral diversity of your fruits and veggies since they are most likely being grown in less nutrient-depleted soils.
