AIP Pumpkin Spice Latte

I love lattes. As basic as that sounds, it’s true and I can’t deny it. I love the warm frothy milk, the hot tea, the slight sweetness… It’s like a hug for your insides. So when pumpkin spice season rolls around my inner basic-white-girl rejoices while wearing a plaid scarf and brown boots. 

Needless to say, when I found out about all of the toxic ingredients that are in a typical pumpkin spice latte early on in my AIP journey, my soul was crushed. So, I finally decided to stop pining away and make my own! Let me tell you, this recipe is way more delicious, nutrient-dense and healing! So, I’d call that a win-win. 

Dandelion root and chicory make a really great herbal coffee substitute. I was shocked how similar this combo tastes to actual coffee but  it comes with more health benefits. Both chicory and dandelion root help gently detox the liver by keeping our bile production flowing smoothly. Dandelion root also acts as a diuretic, which supports the health of our urinary detox pathway. Just remember to replace the tea with water throughout the day to stay properly hydrated. 

AIP Pumpkin Spice Latte

Serves 2

Ingredients

4 cups of water

2 teabags of roasted dandelion root tea

2 tsp chicory root

⅔ cup coconut milk

2 TBS pumpkin puree

1-2 TBS honey

¼ tsp ground cinnamon

⅛ tsp ground ginger

Pinch of ground clove

Optional Add-Ins:

4 scoops of collagen powder

2 TBS MCT oil

 

Directions

Place the dandelion root tea bags in two separate mugs. Using a loose-leaf tea ball or bag, add 1 tsp of chicory to each ball or bag and place them in each mug along with the dandelion root. Bring the water to boil and pour over the tea and steep for 5-10 minutes. While the tea steeps, add the coconut milk, pumpkin, honey, cinnamon, ginger and clove to a small saucepan and bring to medium heat. Stir the mixture until the pumpkin and honey have fully dissolved, about 5 minutes.  

Pour the pumpkin mixture into a blender along with the tea. If you want to make this latte “bulletproof style” add in the collagen powder and MCT oil. Blend everything together for 10 seconds and pour into two large mugs!
