The variety of different foods I used to love is a running joke in our household. Whenever I see food that I no longer eat in the grocery store, at a restaurant, or on TV I always say, “I used to love that” or “that used to be my favorite”. My husband tried keeping a running list of the things I used to love, but he lost count years ago…

Well, let it be known that Mexican food is definitely on that list! Tacos are truly one of my favorite things. If you don’t believe me, come have dinner at our house on Tuesday nights, 9 times out of 10 we’ll be having tacos. It is possible to enjoy this oh-so-tasty cultural food group without nightshades or grains.
